PEANUT BUTTER MONSTER COOKIES
I almost don't want to post this recipe.... :) This is a play on the classic monster cookie otherwise known as the "Everything but the Kitchen Sink" cookie but here is the fun part: the Everything/Monster ingredients are totally customize-able** Like a "choose your own adventure cookie" (should that be it's name?). Anyway, as long as you follow the main list of ingredients and you actually use a tablespoon measure to scoop the cookies, you should be good! If not, well, sorry! But perhaps the crumbled mess you ended up making could mix into a homemade ice cream or become a granola type snack? Either way, have fun and ENJOY!
1/2 cup chunky peanut butter (I use the healthy kind)
1 cup oats
3/4 cups flour (I use Bob's GF 1-4-1)
3/4 tsp baking soda
1/2 cup brown sugar
1/4 tsp salt
1 tsp vanilla
1/3 cup white sugar
1/2 cup butter
OPTIONAL BUT RECOMMENDED:
1 tbsp coconut flakes (my fave)
1 tbsp chopped chocolate chips (my other fave)
1 tbsp nuts
1 tbsp dried fruit
**For best results choose 2 of these options or your cookie will start to fall apart.
Preheat oven to 350 degrees. Line your cookie sheet with parchment paper.mmMix peanut butter, brown sugar, salt, vanilla, butter and white sugar first. Whip util smooth with either a hand mixer or by hand with a mixer. Combine the other ingredients and add slowly while stirring. Then once everything is combined, use a TABLESPOON to scoop the ingredients and lightly pack the mix in before gently scooping out (may take some practice and if it just isn't working, toss your mix in the fridge for about 10 minutes and take a break). Each cookie should have about 2 inches of space on the sheet. Bake cookies for 8-10 minutes and let cool on the tray for another 10 minutes before placing on a cooling rack to set completely. Serve with delight.
